A Pineapple Refresher and a Dessert Drink (with a Secret Ingredient) from the Half Pint Hacks

Frederick is very proud of this drink because, first, it’s fantastic, and second, the “secret ingredient” was his idea.

We were driving back from a Labor Day breakfast and planning to make a pineapple drink.

“It needs more than pineapple,” I said.

We brainstormed. I had a number of suggestions but when Frederick mentioned his I thought, “Bingo!” and off we went.

The flavor blew me away. I was supposed to be on a diet but that was not possible after a small taste on a spoon. I splurged and had a whole four ounces or so. 🙂

The versions these kids made are a bit sweet. You can definitely add less sweetener, perhaps best by making your syrup less of a syrup and more of a strong flavor infusion. That said, the second drink they offer you is very much in the “ice cream” category and is definitely not too sweet if you are really seeking a dessert.

Pineapple Drink Ingredients (Drink #1)

A Pineapple Refresher and a Dessert Drink (with a Secret Ingredient) from the Half Pint Hacks

  • 2 cups pineapple
  • 1 cup of water
  • 1 cup of mint syrup
  • 1 tablespoon of lemon juice

Pineapple Dessert Drink Ingredients (Drink #2)

  • 2 cups pineapple
  • 1 cup of mint syrup
  • 1 tablespoon of lemon juice
  • 1/4 cup of cream

Mint Syrup

  1. Cover 2 cups of fresh mint with 2 cups of boiling water
  2. Stir in 3/4 cups of honey (or sugar)
  3. Stir again and cover with a lid.
  4. Steep for at least 20 minutes but, preferably a couple of hours
  5. Strain the mint solids from the syrup and discard.

Pineapple Drink Steps

  1. Place the ingredients in a blender.
  2. Blend well.
  3. Enjoy!
